Courgettes grate quite easily because they are basically just water already. And before this I didn't really know what to do with them so I either steamed them (soggy) or grilled them (chewy), so this is a REVELATION.

A couple of the other recipes have you add grated carrot to a sauce with works well to thicken and slightly sweeten the sauce without making it taste too much of carrot. It is a marvel.
