Mexican Tofu, Refried Beans and Lime Rice
I mentioned before that tofu is an underrated ingredient, but this meal doesn't show it off. You rub some spices in it and bake it for twenty minutes or so and it comes out rather dry. Now then, I assumed that refried beans would involve some form of frying - perhaps even two forms of frying - but instead you warm them up and then mash them with a potato masher. The overall effect is fine but nothing to write home about.
Cheesy Cottage Pie
I am easy for cottage and cottage-adjacent pies and this is a nice one, though perhaps it could stand to go easier on the tomato ketchup which dominated the main part a little. It is very moreish, which I believe means I can't stop eating it, rather than it tastes a bit like Othello.
One Pot Comforting Chicken and Squash Casserole
OH MY GOD THIS IS SO COMFORTING. You add, to an otherwise normal casserole, a couple of teaspoons of CLOTTED CREAM and some LEMON JUICE and it makes the tastiest thing ever. I am henceforth going to add clotted cream and lemon juice to EVERYTHING. OK I'm not.
Harissa Hummus, Roasted Veg and Freekeh Salad
Freekeh we have covered before, it is breakfast pretending to be rice. I have never home-made hummus before and it does say use a blender, but I used a potato masher and it came out great. You have to add something called tahini, the only thing I know about that it that Tahani's parents left stuff in their will to it by accident on THE GOOD PLACE. It tasted a bit like peanut butter only slightly more savoury, so perhaps that could be substituted in a pinch. Wikipee tells me it's actually sesame seeds.
So to summarise: THE GOOD PLACE IS GREAT
