I have not posted about FOOOOD for a while but I thought I would treat myself to a Gousto box or two, since I sold some Bitcoin recently (in fact, a few days before the price tanked, which makes it look as if I timed the market. I will get fitted for my top hat and monacle soon). Armed with the confidence of knowing how to pronounce Gousto thanks to the telly advert, here we go!

10 min Pesto Chicken Caprese Salad With Croutons

This was DELICIOUS. It is my new favourite way of cooking diced chicken - you simply put it and pesto in a pan; the oil from the pesto helps fry the chicken and the rest of the pesto coats it as you stir. GENIUS. My only small complaint is that the cold mozzarella feels weird against the hot chicken; perhaps slicing the mozz over the croutons before putting them in the oven would be better. Anyway, it's refreshing to have a pesto dish that doesn't involve pasta. If you ever visit my house, expect this to be forced into your facehole.

10 min Lamb Pistachio Tagine

Gousto are getting better at these 10 min deals which previously were just rushed versions of their regular dishes. Couscous is soaked in some stock while mince and sliced courgettes are fried and then sauced up with some ras-el-hanout and chopped dates. Yummity.

Caribbean-spiced Cauliflower with Pineapple Salsa

There's a lot going on here: cooked rice and kidney beans are mixed together, cauli florets are coated in mixed spices and baked with sliced peppers, tinned pineapple is chopped up with spring onions, coriander and a chilli, and finally a dressing is made by combining lime juice (and zest) with olive oil. It was all very nice but perhaps a bit too much of a faff, though the ability to make the salsa and dressing beforehand might make it a good one for dinner parties.

Smoky Tofu Nuggets, BBQ Beans and Wedges

You make your own baked beans with a tin of cannellini beans and some tomato paste and sugar. Meanwhile you bake potato wedges in the oven with the tofu. The tofu differs from other recipes I have tried in that you coat it first in flour, then in mayonnaise instead of raw egg, then in panko. This saves you potentially wasting most of an egg. Baking the tofu instead of shallow-frying it is probably healthier and also means that bits of panko don't break off annoyingly. So this is now my favoured tofu approach. All that said, it is a bit of faff for what is a glorified kid's TV dinner. What is the difference between baking and roasting?
